Baked Cod with Mozzarella and Cherry Tomatoes
Cod is a fish I like to use in my cooking because it is versatile. I regularly make cod recipes such as cod with white wine sauce, risotto with zucchini, and cod and cod casserole with rösti. All very different but so tasty.
This recipe for Baked Cod in Parchment is also a winner. The cod is slowly cooked with celery, cherry tomatoes, and shallot, which gives it a lot of flavor. A delicious topping of mozzarella, Parmesan cheese, and basil completes the dish.
You can prepare them quickly by baking them in the oven. You can serve this dish within 20 minutes, and the delicious smell makes it difficult to wait before eating. When I put this on the table, everything is eaten to the last bite. Is that the case with you, too?

Ingredients
- 4 cod fillets
- salt and pepper
- 2 stalks celery cut into rings
- ½ shallot chopped finely
- 1 ⅓ cup cherry tomatoes
- 10 leaves fresh basil
- ¼ pound mozzarella
- 2 oz. Parmesan cheese
- Fresh Parsley finely chopped

Instructions
- Preheat the oven to 390 ℉.
- Sprinkle the cod fillets with salt and pepper.4 cod fillets, salt and pepper
- Place a sheet of baking paper in front of you.
- Spoon 2 tablespoons of celery on top.2 stalks celery
- Place the cod fillet on the celery and cover the fish with cherry tomatoes, shallot, mozzarella, and basil.½ shallot, 1 ⅓ cup cherry tomatoes, 10 leaves fresh basil, ¼ pound mozzarella
- Grate some Parmesan cheese over the fish and close the baking paper to get a package.2 oz. Parmesan cheese
- Tie the package closed with kitchen twine.
- Repeat this for each cod fillet and place the parcels on a baking tray.
- Place the baking tray in the oven and bake the fish for 20 minutes.
- Open the packages carefully (steam may come out) and sprinkle some parsley over them.Fresh Parsley
Notes
- Refrigerator: Store in an airtight container in the fridge for two days.
- Reheat: Heat the parcels in the oven at 350 °F (180 °C) for 10 to 15 minutes until warm.
