Chicken Breast with Orange Thyme Sauce
On special occasions, I like to prepare something delicious. One of my go-to recipes is, e.g., Saltimbocca, or Baked Ham with Cumberland Sauce? But if you want to serve dinner with poultry, this tender chicken with thyme sauce might be something for you. Delicious with fried potatoes and, for example, this Caprese salad.
How do you make the extra chicken tender?
Season the chicken with salt and pepper and flour. The flour gives it a crispy layer and keeps it wonderfully tender.
First, fry the chicken breasts quickly until brown, and then let them cook over low heat. Together with the orange sauce with thyme a delicious dish. And now the recipe.
What do you need for Orange Thyme Sauce Chicken?
To prepare this Chicken Breast with Orange Thyme Sauce, you need the following ingredients. You can find the correct amounts in the recipe card at the bottom of the blog:
Perfect Fried Chicken Breast
- Chicken breast - For this recipe, I used chicken breast. But chicken breast fillets are, of course, also possible.
- Butter and Oil - You fry the chicken in a butter, oil mixture. This way, you can make the fats hot without burning butter (and you still have that delicious taste). The butter is also the base of the sauce. Use unsalted butter.
- All-purpose Flour - Before frying, dip the chicken breast in the flour. They get a delicious crispy outside, golden yellow when you fry them in the pan.
Orange Thyme Sauce
- Shallot - Gives extra flavor to the sauce. Shallot has a bit more spice compared to a regular onion.
- Chicken stock - To give the sauce the right thickness and great taste. The best is homemade chicken stock, but use a cube if you don't have it.
- Orange - Gives a fruity taste to the sauce. Orange goes very well with chicken breast.
- Thyme - Use fresh thyme to give the orange sauce a lot of flavors. You can also replace the thyme with two teaspoons of dried or rosemary.
- Sour cream - Makes the sauce very creamy, with fresh acidity.
How to prepare Chicken Cutlets with Orange and Thyme Sauce

- Melt the butter in a pan and fry the shallot for 3 minutes. Then pour the stock and orange juice and put the thyme on top. Stir everything well and then let it reduce by half over high heat.
- Turn off the heat and fold the sour cream into the sauce until smooth.
- In a bowl, mix the flour with salt and pepper. Press the chicken breast into the flour and knock off the excess.
- Put the butter and oil in the pan and let the butter melt. Place the chicken breasts in the pan and fry for 2 minutes. Flip the fillets and cook for a further 2 minutes until golden brown. Lower the heat and let the chicken breasts cook for 10 minutes. Serve the chicken with orange thyme sauce.

- 1 shallot, finely chopped
- 2 twigs fresh thyme, or 2 teaspoons dried
- 1 cup chicken stock
- 2 oranges, juice
- ½ cup sour cream
Instructions

- Heat the oil in the pan and melt the butter.2 tablespoons butter, 2 tablespoons sunflower oil
- Mix the flour with the salt and pepper on a plate or bowl.¼ teaspoon salt, ⅛ teaspoon ground black pepper, 4 tablespoons all-purpose flour
- Pat the chicken breasts dry, sprinkle with salt and pepper to taste, and coat them in the flour. Tap off the excess flour from the chicken.2 chicken breasts
- Fry on both sides for 2 minutes until golden brown.
- Reduce the heat to medium and let the chicken cook slowly for 10 minutes.
Orange Thyme Sauce
- Meanwhile, melt the butter in a pan and fry the shallot for about 3 minutes until translucent.1 tablespoon butter, 1 shallot
- Add the thyme, stock, and orange juice and bring to a boil.2 twigs fresh thyme, 1 cup chicken stock, 2 oranges
- Let the sauce reduce by half.
- Stir the sour cream into the sauce and season with salt and pepper.½ cup sour cream
Notes
- Baked potatoes and a delicious Caprese salad.
- Or cut the chicken into cubes and mix with the sauce through cooked tagliatelle. That makes for an easy Italian evening meal.
- Refrigeration - The sauce and chicken can be kept covered in the refrigerator for up to 2 days.
- Freezer - Both the chicken and sauce can be frozen. Pack in a freezer box or bag. This keeps it good for up to 2 months. Then, let thaw in the refrigerator.
- Reheating - You can slowly reheat the chicken in the pan. Or put the fillet in a baking dish and heat for 25 minutes at 320 °F (160 °C), covered with aluminum foil. Place the sauce in a saucepan and heat over medium heat; keep stirring until warm. The sauce will not curdle because sour cream has a high-fat content, which prevents this.
