Tomato soup, one of the favorite soups in our house. I've already covered a recipe before for rich tomato soup, but this is quite a nice addition to the recipe base. By adding the sour cream into the soup, by using a piping bottle, whereas you create a spiral in the soup and use a skewer to create a web.

Therefore, this soup also looks exciting and it's great fun as a dish for Halloween (or a very exciting children's party). My children first looked a little hesitant, but when the youngest (that's the daredevil in the field of food) had approved they all attacked the soup. We have eaten the freaky bread fingers with the soup and it was a tasty combination. And so we've got a lovely lunch. But I can imagine this is a great entrée for your next Halloween buffet or dinner party.

Ingredients for this homemade tomato soup
These are the ingredients for this delicious creamy tomato soup (with meatballs) for Halloween.

- Butter: melt the butter and mix with the flour. That way you can make a roux. A roux is made to thicken this soup.
- Flour: the second ingredient for the roux is flour. Bake the roux for 2 minutes otherwise, you will taste the flour in your soup.
- Stock: use beef stock or vegetable stock (vegetarian variant). Add the stock cold (room temperature). When you're roux is warm (like in this recipe) you add cold liquid.
- Sieved tomatoes: canned tomatoes are delicious because they've got just the right flavor. I used sieved canned tomatoes so I won't have to blend and sieve this soup.
- Sour cream: put it in a bottle and draw lines in the soup. Use at room temperature.
- Salt and pepper: flavor the soup with salt and pepper.
- Ground beef: Optional, when you want to make this creamy tomato soup with balls then use ground beef. Make balls by rolling pieces of meat between the palms of your hand. Cook for an extra 15 minutes so the beef is done.
How do you prepare this creamy tomato soup

Step 1: Melt the butter on low heat and add the flour, while whisking with a wooden spatula. Let it bake for 2 minutes, so the flour flavor will disappear. Add the cooled stock bit by bit while stirring with a whisk. When all the stock is added, bring the soup to a boil.

Step 2: Bake the tomato paste for 2 minutes in a frying pan until the flavor is sweet, instead of sour. Add the tomato paste with the soup. Also, pour the sieved tomatoes into the pan. Bring to the boil and simmer for 5 minutes. Flavor with salt and pepper.

Step 3: Take the sour cream from the refrigerator and let it come to room temperature. Put in a bottle and add a point to the middle. Draw circles around it.

Step 4: With a satay, skewer draw a line from the inside out through the layers of sour cream. This way you'll draw the spiderweb.

This recipe is for tomato soup. But you can make this recipe in Halloween style with these soup recipes:
- Pumpkin soup, which is really a Halloween style soup. Like this recipe.

- This creamy tomato soup can be great as a vegetarian soup (without meatballs), use a vegetable broth base. If you want to eat it with meatballs, then a beef broth base would be very tasty;
- For this soup, you make a roux. When you make a roux one of the most important things you need to consider is that you have a hot and cold ingredient when diluting so no lumps are made. Let the butter/flour mixture cool and add hot broth or add cold broth to the hot butter/flour mixture.
- Bake the tomato paste for two minutes. Therefore the paste becomes sweeter (instead of sour). You can smell it (the puree will smell sweeter).
- If you make a vegetarian creamy tomato soup you can add sliced sundried tomatoes as a filling.
- Take the sour cream 15 minutes before decorating from the refrigerator. That way it becomes more fluid and you can draw the spider web more easily.
Prepare this in advance
This soup can be made a day before you eat it. Let cool to room temperature, but make sure that when you're cooling it is not airtight sealed and when cooled down you've got to store the soup in an airtight container in the refrigerator. Warm it just before serving and add the sour cream when serving the soup.
Store creamy tomato soup for Halloween
- In the fridge, the soup got a shelf life of 2 days. Make sure you cool down the soup quickly before storing it.
- Freeze the soup in the fridge for a maximum of 3 months.

Creamy tomato soup with meatballs for Halloween

Ingredients
- 70 grams butter
- 70 grams flour
- 1 liter broth Vegetable Broth or beef broth
- 60 grams tomato paste
- 800 grams passata
- 125 ml sour cream
- salt and pepper
- 250 grams ground beef optional

Preparation
- Put the sour cream in a bottle and take it 15 minutes before use from the refrigerator.
- Make sure the stock is cold.
- When preparing balls, roll small balls from ground beef between the palm of your hands.
Prepare the creamy tomato soup
- Melt the butter over low heat.
- Add the flour at once while stirring with a wooden spatula.
- Fry the flour for 2 minutes, keep stirring, but don't let it brown.
- Gradually add the cold broth, while stirring with a whisk, so you don't get any lumps.
- When all the broth is added, bring it to a boil.
- In a frying pan bake the tomato paste for 2 minutes (until it smells sweet rather than acidic).
- Add the tomato puree to the broth and also pour the sieved tomatoes into the pan.
- Bring everything to a boil again and simmer for 5 minutes. Season with salt and pepper.
Optional add balls
- Add the balls to the soup. Simmer for 15 minutes so the meat gets done.
Prepare a spider web
- Ladle the soup into a bowl and take the sour cream and put a drip in the middle. Draw circles around the middle.
- Take a satay skewer and draw lines from the inside out, so you'll get a spider web.
